Berry Meringue

Strawberries 150g (5oz), hulled
Mixed fresh berries 450g (usually sold in clear plastic boxes)
Caster sugar 175g (6oz)
Plain flour 25g (1oz)
Eggs 2, whites only
1 Preheat oven to 190°C/375°F/Gas 5. If large, cut strawberries into slices widthways, if small cut in half or quarter lengthways. If very small, leave whole.
2 Put strawberries and mixed berries into a mixing bowl. Add 50g (2oz) of sugar and all flour and mix gently together. Evenly spread in a baking dish measuring about 25cm (9½in) wide x 3.5cm (1½in) deep.
3 Put egg whites into a clean, grease-free mixing bowl and whisk until they hold a stiff peak. Very gradually whisk in remaining sugar to make a stiff and shiny meringue.
4 Spoon into a large piping bag fitted with a large star nozzle and pipe in overlapping swirls on top of fruit and all around the edge. Pipe a large swirl in centre.
5 Place dish on a baking tray and cook in centre of oven for 20–25 minutes, or until meringue is lightly browned. Serve the pudding either hot or cold and with cream or ice cream.
