Elderflower and Mint Iced Tea
A delicious and refreshing Elderflower and Mint Iced Tea taken from the Dairy Diary.
Ingredients
Darjeeling teabags 4
Fresh mint 1 bunch
Elderflower cordial 225ml (8fl oz)
Ice cubes to serve
Lemon ½, finely grated zest
Instructions

Place teabags and half the mint in a teapot and pour over 1 litre (1¾ pints) just-boiled water. Leave to steep for 10 minutes.

Remove teabags and mint and allow to cool.

Stir in elderflower cordial and pour into 4 glasses. Add ice cubes and a mint sprig to each with a little lemon zest.
