Strawberries 750g (1lb 10oz), hulled and chopped
Caster sugar 150g (5oz)
Vanilla pod 1, split and seeds scraped out (or 1 tsp vanilla extract)
Lemon juice or cider vinegar 1 tbsp
Butter small knob
Instructions
1
Heat a large non-stick pan over a medium heat. Add chopped strawberries, sugar, vanilla seeds and pod or extract. Stir until fruit starts to soften and release juices and sugar has completely dissolved.

This is a gorgeous fresh tasting conserve. I make it every year since first seeing it in Dairy a few years back.
