Shakshuka
A delicious Shakshuka recipe taken from the Healthier Comfort Food Cookbook.
Ingredients
Olive oil spray
Red onion 1 small, peeled and finely chopped
Red chilli 1 small, deseeded and chopped
Garlic 1 clove, peeled and sliced
Ground cumin 1 tsp
Chopped tomatoes 400g can
Salt and freshly ground black pepper
Eggs 2 medium
Coriander leaves handful, roughly chopped
Crusty bread to serve

Heat a non-stick frying pan or wok and spray with olive oil. Add the onion, chilli and garlic and cook gently for 3–4 minutes until starting to soften.

Sprinkle in the cumin, cook for 1 minute then stir in the chopped tomatoes. Increase the heat and leave to simmer for 5–8 minutes until the sauce has reduced and thickened.

Turn the heat down to a gentle simmer. Season the sauce with salt and pepper to taste

Using the back of a spoon, make two hollows in the sauce and carefully crack in the eggs. Scatter with the coriander and cover the pan with a lid. Cook for 4–5 minutes or until the eggs are set to your liking. Serve with crusty bread.
