Pickled Pear and Crispy Turkey Salad with Blue Cheese Dressing
A delicious Winter Salad taken from the Dairy Diary 2023.
Ingredients
Cider vinegar 3 tbsp
Maple syrup 1 tbsp
Red onion 1 small, sliced
Pear 1, peeled and sliced
Olive oil 1 tbsp
Leftover cooked turkey 150g (5oz),
roughly sliced

Mixed salad leaves 2 large handfuls
Blue cheese such as Stilton 25g (1oz),
crumbled
crumbled
Milk 3-4 tbsp
Walnuts 25g (1oz), chopped
Instructions

In a large bowl mix together vinegar, maple syrup and seasoning. Toss through onion and pear; set aside.

Heat oil in a frying pan and fry turkey for 3-4 minutes until crispy and golden.

Mix salad leaves through onion and pear to coat in the pickling liquid. Spoon onto plates, keeping any remaining juices in the bowl. Mix in blue cheese and enough milk to whisk to a smooth dressing.

Top salad with the crispy turkey, chopped walnuts and the blue cheese dressing.
