Quick Fresh Strawberry Conserve

This easy-to-prepare Quick Fresh Strawberry Conserve is a Dairy Diary recipe.



Quick Fresh Strawberry Conserve

Ingredients

Strawberries 750g (1lb 10oz), hulled and chopped

Caster sugar 150g (5oz)

Vanilla pod 1, split and seeds scraped out (or 1 tsp vanilla extract)

Lemon juice or cider vinegar 1 tbsp

Butter small knob

Instructions

Heat a large non-stick pan over a medium heat. Add chopped strawberries, sugar, vanilla seeds and pod or extract. Stir until fruit starts to soften and release juices and sugar has completely dissolved.

Bring to the boil and cook, stirring occasionally, for about 10 minutes or until slightly thickened. Stir in lemon juice and butter. Remove from heat and discard vanilla pod.

Pour conserve into a warm, sterilised jar. Cool and cover with a lid.
