
Sloppy Joes
An irresistible recipe for little fussy eaters taken from the Quick After Work Cookbook.

Ingredients
Vegetable oil 1 tbsp
Onion 1 small, peeled and finely chopped
Garlic 1 clove, peeled and finely chopped
Carrot 1 large, peeled and grated
Lean minced beef 500g (1lb 2oz)
Chopped tomatoes 400g can
Tomato ketchup 2 tbsp, plus extra to serve
Beef stock cube 1
Cucumber ¼
Wholemeal rolls or hot dog rolls 4-8, dependent on size
Instructions

Heat the oil in a large frying pan and fry the onion and garlic with about half the carrot and the beef for 5 minutes until the beef is browned all over.

Stir in the tomatoes and ketchup. Crumble in the stock cube, bring to the boil and simmer for 20 minutes, stirring occasionally, until thick.

Meanwhile, grate the cucumber and mix with the remaining carrot.

To serve, slice the rolls down the centre and open out. Spoon over the meat sauce. Serve immediately with carrot and cucumber sprinkled on top, and with extra ketchup.
